Easy Sweet Chili Salmon Cakes

I always have a couple cans of salmon on hand to make these quick and easy salmon cakes.  With a spinach salad, these make a great weekend lunch for the whole family.

Here’s what you need:

2 cans salmon


Scant 1/4 cup red onion, finely diced

1/4 cup sweet Chili sauce

1/4 cup rolled oats

1/4 flaxseed

1/4 tsp salt

1/2 tsp ground mustard

Pinch of garlic salt

Olive oil for frying

Here’s what you do:

Combine all of the ingredients, stirring to mix them together.  In a large frying pan, heat the olive oil.  While it is heating, form the salmon into patties (I find it makes about four large-ish patties).  Place in the frying pan and fry until golden brown on each side.
