Preheat your oven to 450F.
Grab a cauliflower. Turn it so that the stem is facing down on your counter, and slice it into vertical slabs, about 3/4″ thick. It will fall apart a little, but some pieces will stay intact. No biggie.
Place the cauliflower on a baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to toss the cauliflower so that it is coated in oil and seasonings.

Slide the baking sheet into the oven and roast the cauliflower until it’s soft, and browned in places.
